I am in Spain so I can't get the Taiwan omelet, that is why I made it by myself~
1/1 将高筋面粉及地瓜粉以3:1加入,再放适当调味料(盐、鲜鸡粉或胡椒)及葱,缓缓加入水,搅拌均匀(浓稠度约像外面卖的木瓜牛奶),拿个平底锅先热锅,将调好的面粉煳倒入,转动平底锅将面粉煳均匀分散,煮到不黏锅再翻面煎,基本上饼皮就完成柳~
Because I like al dente flavor so I choose strong flour to make it, but you can also use all-purpose flavor~
